Todays post is dedicated to the simple cook! This year my sister and I changed the way we eat. We’ve never really been unhealthy in our eating but I guess we didn’t really pay attention to what’s in our food or our portions. Before 2015 the only foods I could master was probably cereal and fairy cakes, I know weird combination but it’s true. With this in mind plus the fact that both my sister and I suffer with M.E a lot of the time we don’t have the energy or the money to cook up fancy or complex recipes. So for this reason I try and think of meals that cover healthy nutritional values but are also fairly quick simple and relatively fail-safe.
Every now and again, i’ll be sharing some of my favourite food combinations incase you also like both simple and healthy meals. If you are like me, then you’ll prefer to eat more of your comfort foods on the weekend but this meal would be a great fresh start to your week. Below I will tell you the basics
At the base of this meal, I mashed up avocado.
Then I fried some king prawns with some hot paprika spice.
Oven cooked some plum tomatoes.
Boiled an egg
Finished of with some not so finely chopped chives, lets call this the rustic touch ;D
That’s all there is to it, very easy yet very tasty! Or at least I like to think so. I am always up for learning new recipes, so if you know of any that you think I may like, please let me know!
